The Royal Wedding may have come and gone, but that doesn’t mean the Pimm’s has to stop flowing. While this gin-based liqueur has its roots in Great Britain (there was an actual Mr. Pimm), it’s the perfect summer time sipper no matter where you are. Plus, it’s totally sophisticated and it basically tastes like you’re drinking a boozy flower garden with the Queen herself. So there’s that.
Pimm’s and lemonade is a warm weather classic for sure, but what makes it so fun, and not to mention drinkable, is how customizable it really is. If cucumbers and strawberries aren’t really your thing, try oranges and blueberries or raspberries instead. Boozy fruit is boozy fruit at the end of the day, so you really can’t go wrong. The liqueur itself is floral and spicy all at once, so the lemonade adds a sweet balance. If you’re looking to get even fancier (I see you) try adding some champagne at the end to give it a crisp, clean finish.
Perfect to whip up at the first hint of warm weather, this recipe makes enough to serve two, but if you’re looking to make this gem for a larger group, double the quantities as necessary!
Ingredients:
2 cups lemonade (or iced tea)
1/2 cup Pimm’s No. 1 (or you could add to taste)
5-7 sprigs of mint (plus more for garnish)
1/2 of one lemon
1/2 of one cucumber
Handful of strawberries (plus extra for garnish)
Directions:
1. Add ice to pitcher or cocktail mixing glass.
2. Pour Pimm’s and lemonade over ice.
3. Slice fruit, add to lemonade mixture and stir.
4. Pour over ice into glasses and add extra mint and fruits as garnish.
5. Sit on the porch or on a blanket in the park and get your sip on.
