On Thanksgiving Day this year, my cousin and I crafted a delightful, crowd-pleasing salad together, with the help of my mom’s famous homemade dressing (don’t you love family recipes?). The comforting flavors and bright pomegranate seeds make this salad the perfect side to a holiday lunch or dinner. And so, I am deeming it the fresh festive choice for your Christmas feast next week. Plus, it’s so easy to create. Enjoy!
Ingredients
For the salad (we eyeballed the proportions):
Mixed greens
Pomegranate seeds
Goat cheese crumbles
Candied pecans
1 thinly sliced Honeycrisp apple
For the dressing (dress to your liking):
1/4 c. Apple cider vinegar
3 t. Minced shallots
2 t. Dijon mustard
2 t. Honey
1/2 c. Light olive oil
Directions
For the salad:
Simply combine the ingredients as you please. Voilà!
For the dressing:
Combine apple cider vinegar, minced shallots, Dijon mustard, and honey.
Add olive oil and whisk.
Add salt and pepper to taste.
