I have been on a health kick lately, trying to cut out all the additives and unnecessary ingredients often found in foods, and going for simple. This means I’ve been making a lot more of my own food, in addition to trying healthier easy alternatives like Daily Harvest (get $25 off here – I’m hooked).
I have felt better opting for the fresh and the basic – bananas, broccoli, almonds. I’ve been keeping what I eat uncomplicated and undemanding. Yesterday, I had some old bananas and thought about making banana bread, but then again, I didn’t really want the sugar. So I tried something new after seeing it on The Simple Veganista – and it turned out delicious! Plus, it’s gluten-free and vegan. Here’s the recipe:
I used Thrive Market Organic Gluten-Free Rolled Oats (love these for oatmeal too), Enjoy Life Dark Chocolate Morsels (my favorites), 365 Ground Cinnamon, and organic bananas. I stored my bites in these glass containers.
These would be perfect as a breakfast supplement, snack, or even dessert. The recipe could be easily cut in half if you want less, or if you want more, you might make yours smaller than mine. I formed generous scoops, so each of my “bites” really take several bites to eat instead of just one. You might even experiment with adding different flavors, like dried fruit or coconut. Enjoy!
