Last year, I created my Honey Harvest Snack Mix recipe. It was a tasty, salty-and-sweet mix perfect for the month of October. Since then, I discovered that I have a gluten intolerance, so I made some changes to the ingredients and tweaked some of the flavors. I think it turned out even more delicious this year!
I mixed Rice Chex, pretzel sticks (GF optional), pumpkin seeds, and peanuts in a large container. Then, I melted unsalted butter and stirred in salt and honey. I drizzled the mixture over the dry ingredients. A year ago, I baked my snack mix, but this time I decided to try a quicker method and used the microwave. This works well but does take keeping a careful eye on it since it can burn quickly in the microwave. Please adjust cooking times based on the strength of yours, or use the slower oven method. After, I added in candy corn to my liking. I decided to skip the Cheerios since they are not GF and the dark chocolate chips for a more balanced salty/sweet flavor, and I honestly don’t miss either. If you don’t like candy corn, you might opt for the chocolate chips. I adjusted some amounts of ingredients used to suit these changes.
